GOURMET KAAPI HOT CHOCOLATE - LOVE KAAPI

Serves -2-3

Ingredients

  • 5 table spoons of Slow brewed Kaapi decoction
  • 100g of Coverture Dark Chocolate/Good quality store bought chocolate
  • 100g of Thick Cream
  • 1 tablespoon of Dark Cocoa Powder
  • 100g of boiled milk (frothed)
  • 4 marshmallow Cubes.
  • Cocoa /cinnamon powder for garnish.

Equipment Required

  • Double boiler for melting and heating the hot chocolate.
  • South Indian Filter for brewing the decoction

Slow Brewed Kaapi:

Ingredients

  • 30g of Love Kaapi coffee grounds (chicory blend 80:20)
  • 45g hot water 94-96 deg for blooming
  • 90g of Ice (this helps in slowing down the brew time)
  • 45g room temperature water to avoid clumping of coffee.

This brewing is a slow process and takes upto 1.5 hours depending on the temperature in your kitchen & can be further slowed down by putting the filter in the refrigerator.

Recipe:

On a double boiler melt the dark coverture chocolate blocks, keep stirring the chocolate and once melted,add the thick cream and continue stirring followed by sifted Dark Cocoa powder and then the decoction.

 Weigh 70g of milk and add to the mixture and stir till the mixture gets thick .

Pour into serving glasses.Froth the remaining 30g of milk and pour it over to get a frothy top. Top up with marshmallows and sprinkle some cocoa powder or cinnamon powder.
