VIETNAMESE KAAPI

The Vietnamese brew their coffee known as Cafe Sua Nong using their own filter called as “Phin filter”.  Here, we have substituted it with the Indian Filter. Don’t let the technique get you panicky. It is a lot simpler than it appears and we are sure this one will be doing more rounds in your kitchen.

Ingredients

  • 2-3 TBSP of Condensed milk
  • 2 TBSP of Coffee grounds with Chicory
  • Hot water 1/2 Cup plus 1 TBSP for blooming
  • 4 cubes of ice ( for cold Kaapi /Cafe Sua Da)

Method

  • Take a clear glass which can accommodate upto 200ml of liquid and the diameter should be enough to snug fit the top chamber of the Indian filter inside the glass. Alternatively, the decoction can be brewed separately and then added into the glass.
  • Pour the condensed milk into a glass if you prefer it strong and less sweet you can reduce the quantity. Now place the filter on top of the glass and add Love Kaapi coffee grounds with Chicory.
  • Pour 1 Tbsp of hot water evenly to bloom the grounds. Wait for 30 seconds and then add 1/2 Cup of hot water (85-90 deg C) into the filter. Cover the lid and let it brew.
  • The decoction will begin to drip onto the condensed milk. It may take 3-4 minutes for all the water to drip through. Once the dripping stops,remove the filter and stir well.
  • This coffee can be had hot but most people prefer it cold and it can be transformed by adding a few cubes of ice.
